Adjust Servings:
Eggplant (aubergines), sliced into ¼” thick rounds
Butter , melted
Sunflower Seeds , toasted and finely chopped
Parmesan Cheese , grated

Steps

Done

Brush both sides of each eggplant slice with melted butter and place on a baking tray.

Sprinkle toasted, chopped sunflower seeds liberally over each slice.  They’ll stick to the butter.

Bake in the oven at 350F for 20 minutes.

Remove tray from the oven and carefully sprinkle grated parmesan over each slice.

Broil (grill) on low heat until golden brown.
