8 Pickled Figs , plus 2 tablespoons (28 ml) brine, divided
4 tablespoons (38 g) fresh Goat Cheese

Preheat the oven to 400°F (200°C, or gas mark 6) and line a small baking sheet with parchment.

Cook the bacon in a large skillet, turning once, until lightly browned but not crisp, about 6 minutes. Drain on paper towels.

Using a sharp knife, cut the figs almost in half, starting at the stem end but not going all the way through. Divide the cheese evenly and fill the figs. Wrap each in a piece of bacon, securing with a decorative pick, and transfer to the baking sheet. Bake until the bacon is crisp and the cheese is soft, about 5 minutes. Transfer to a platter, and drizzle with some of the brine. Serve hot or warm.
