Ingredients

Adjust Servings:
1 package firm Tofu , sliced
Ground Black Pepper
Onion Powder
Garlic Powder
½ cup Spelt Flour
3 tablespoons Olive Oil
1 medium Onion , chopped
4 cloves Garlic , minced
1 green Bell Peppers , diced
1 cup button Mushrooms , sliced
½ cup Shiitake Mushrooms , sliced
½ cup Water
2 tablespoons grated Lemon Zest
1 tablespoon fresh Parsley , chopped
1 tablespoon fresh Basil , chopped
1 tablespoon fresh Cilantro , chopped
¼ teaspoon Cayenne Pepper
Sea Salt to taste
½ teaspoon freshly ground Black Pepper
½ cup Microgreens , for garnish

Sprinkle the tofu slices with pepper, onion powder and garlic powder on both sides, then dredge in flour.

Heat the oil in a skillet on high and sauté the tofu until browned, about 10 minutes. Set aside.

Sauté the onion, garlic, and bell pepper until the onion is translucent.

Add the mushrooms and sauté until golden brown, about 10 minutes.

Add water, lemon zest, parsley, basil, cilantro, cayenne, salt, and pepper and simmer for 10 minutes.

Serve sauce over the sliced tofu. Garnish with micro-greens.
