Ingredients

Adjust Servings:
2 cups of Sweet Potato , mashed
2 bulbs of roasted Garlic
1 cup of Cannellini Beans
2 cloves of Garlic , minced
1/3 cup of panko Breadcrumbs
1/3 cup of Oat Flour
1 Egg , beaten
1½ teaspoons of smoked Paprika
1 teaspoon of Salt
Dash of Black Pepper
1/8 teaspoons of Cumin powder
2 to 3 Tablespoons of extra virgin Olive Oil
1 Avocado , thinly sliced
2/3 cup of plain Greek Yogurt
1 teaspoon of Maple Syrup
Dash of Salt
Black Pepper

These burgers are another type of sweet potato burger that you can enjoy any night of the week.

Steps

Pierce the sweet potatoes with a fork. Wrap in a sheet of paper towels. Place not the microwave to cook for 5 minutes. Turn and continue to cook for an additional 5 minutes. Remove and set aside to cool. Slice in half and scoop the flesh into a bowl. Mash until smooth in consistency.

In the bowl, add in the cannellini beans. Stir well to mix.

Add in the dash of salt, black pepper, smoked paprika, powdered cumin, panko breadcrumbs, minced garlic, egg and oat flour. Stir well until mixed.

Transfer the bowl into the fridge to chill for 15 to 20 minutes.

In a food processor, add in the yogurt, maple syrup, dash of salt and black pepper. Pulse on the highest setting until smooth in consistency. Set aside.

In a skillet set over medium heat, add in 2 tablespoons of olive oil.

Shape the sweet potato mix into 4 patties. Place into the skillet. Cook for 5 to 7 minutes on each side or until golden. Transfer onto hamburger buns.

Drizzle the garlic cream over the top and serve immediately.
