1 tbsp of Olive Oil
1 small diced Onion , yellow
1 minced Garlic clove
2 horizontally sliced fillets, Chicken breast
½ tsp of Sea Salt
¼ tsp of Cayenne Pepper
1 tbsp of Balsamic vinegar
2 halved, de-seeded Bell Peppers
2 slices of Provolone Cheese , reduced fat

This is a healthy, guilt-free alternative to traditional Philly cheese steaks. They are not made with fatty beef, but lean chicken. Cook it up with the seasonings and the onions, and I bet you won’t even miss the beef.

Preheat the oven to 350F.

Heat oil in large sized skillet on med. heat. Add onion. Cook till it is soft.

Add chicken and garlic. Cook till browned.

Add and stir vinegar, sea salt and cayenne pepper.

Cook till chicken has cooked completely through.

Cut bell peppers in halves. Remove seeds and core. Fill with chicken breast mixture. Lay in baking dish.

Add several tbsp. of water to bottom of baking dish. Cover with aluminum foil. Bake at 350F for ½ hour to 35 minutes.

Next, remove foil. Top bell pepper halves with ½ slices of cheese. Leave uncovered and place back in oven. Bake till cheese is bubbly and browned, which usually takes five to
10 minutes more. Serve.
