This Alsatian dish is full of flavour and very filling. Enjoy it with a simple fresh green salad.

In a heavy pan, heat the lard or oil and sauté the onions until soft but not browned. Drain well on kitchen paper.

Add the bacon to the pan and cook briskly for a couple of minutes, then drain off the fat. Next, mix the cream and the eggs and season well. Stir in the onions and the bacon and fill the pastry case.

Preheat the oven to 220°C/425°F/gas mark 7 and bake for 10–15 minutes, turning the heat down to 190°C/375°F/gas mark 5 for a further 15 minutes, or until the filling is set. Serve warm.
