3 cups chopped Onion (2 medium)
¼ cup chopped Celery
2 lb fresh jumbo lump Crab Meat , drained
⅓ cup all-purpose Flour
1 (12-oz) can evaporated Milk
1 tsp Salt
¼ tsp Hot Sauce
⅛ tsp ground Red Pepper
2 oz freshly grated Parmigiano-Reggiano Cheese

This dish is best made with fresh-picked crabmeat straight from the Gulf.

Preheat oven to 350°. Melt butter in a 4-qt. saucepan or Dutch oven over medium-high heat. Add chopped onions and celery; cook, stirring often, 8 minutes or until softened.

Meanwhile, pick crabmeat, removing any bits of shell. Remove onion mixture from heat; sprinkle with flour, stirring constantly. Gradually stir in milk. Cook, stirring constantly, over medium heat 2 minutes or until thickened. Stir in salt, hot sauce, and pepper. Add crabmeat.

Pour crab mixture into a lightly greased 13- x 9-inch baking dish; sprinkle with cheese.

Bake, uncovered, at 350° for 30 minutes or until golden and bubbly.
