1 pound small Zucchini
1 bunch Zucchini blossoms
1 cup Flour
⅔ cup Sugar
3 Egg
4 tablespoons Butter
1 teaspoon Vanilla
¼ cup Milk
Olive Oil

Thinly slice the zucchini and the zucchini blossoms (flower pistils removed) and combine in a mixing bowl. Season with salt and set aside for 1 hour.

Meanwhile, in a mixing bowl, combine the eggs with the flour, butter, vanilla, milk and a pinch of salt. Mix to form a batter. Rinse and dry the zucchini mixture, and stir into the batter.

Pour the batter into a buttered and floured baking pan. Drizzle with olive oil and bake in a 375° preheated oven for 30 minutes.
