Ingredients

1 tablespoon Olive Oil
2 Yellow Onion , diced
2 cloves Garlic , minced
6 cups Vegetable Broth
5 Beetroot , chopped; reserve ½ cup for garnish
1 large Carrots , sliced
2 Leeks , chopped
2 Potatoes , diced
2 cups red Cabbage , shredded
2 cups green Cabbage , shredded
2 teaspoons Caraway Seeds
Sea Salt to taste
½ teaspoon freshly ground Black Pepper
2 tablespoons Apple Cider Vinegar
1 Bay Leaf

Heat the oil in a large saucepan over medium heat and sauté the onions and garlic until the onions are translucent.

Add the vegetable stock, beets, carrot, leeks, potatoes, red and green cabbage, caraway seeds, salt, pepper, vinegar, and bay leaf, and simmer for 30-40 minutes.
