Ingredients

Adjust Servings:
3 ounces Spaghetti Squash
2 tablespoons Olive Oil
6 ounces Tomato , chopped
3 ounces Scallions , chopped
3 ounces green Bell Peppers , chopped
1½ ounces Onion , chopped
Pinch of Black Pepper
Pinch of Cayenne Pepper
¼ teaspoon Basil
1 teaspoon Salt

Preheat oven to 400 degrees.

Cut squash in half; remove the seeds and discard them.

Place the halves in a baking pan cut side down, with ¼ inch water. Bake for 40 minutes.

Sauté the tomato, scallions, green pepper, onion, black pepper and cayenne in the skillet with olive oil for 5 minutes.

Add the basil and salt. Remove the spaghetti from the squash and combine with the sautéed mixture. Toss gently. Serve hot.
