For the Salad
200 g Couscous
1 large bunch Parsley
½ bunch fresh Mint
½ Red Onion
4 Tomatoes
½ Cucumber
200 g cooked Chickpeas
For the Dressing
4 tbsp cold-pressed Olive Oil
1 Lemon Juice
1 tsp Salt
Extras
4 tbsp fresh Pomegranate Seeds

Prepare the couscous according to the instructions on the packet.

Finely chop the parsley, mint leaves and onion. Core and finely dice the tomatoes and cucumber.

For the dressing, mix together the ingredients until smooth.

Mix the couscous, herbs, onion, tomatoes, cucumber and chickpeas with the dressing, and sprinkle the salad with the pomegranate seeds.
