1 pound Meatloaf Mix in a muffin pan
2 Tablespoons Tomato Paste
1 Tablespoon Dijon Mustard
2 Tablespoons Honey
For the Broccoli Forest Rice
1 head Broccoli , broken into floret pieces with 2 inches of stem attached
2 cups prepared Brown Rice
1 medium Carrots , shredded
¼ teaspoon sweet Hungarian Paprika
¼ teaspoon Kosher Salt
¼ teaspoon Black Pepper

For the Muffin Tin Meatloaf

Preheat the oven to 400°F. Remove the muffin pan from the fridge and remove the plastic wrap.

In a small bowl, mix the tomato paste, Dijon, and honey. Baste the tops of the meatloaves with the mixture.

Bake for about 15 minutes, until the meat mixture is firm but moist; the internal temperature should be 165°F. If using turkey, it will take an extra 7 minutes.

For the Broccoli Forest Rice

Place the broccoli in a 2-quart saucepan with ½ cup water.

Cover and steam on medium heat for 3 to 4 minutes. Do not overcook.

Remove from heat and strain.

In the same saucepan, heat 2 cups of prepared rice with 1 Tablespoon water over medium heat until warmed through.

Arrange rice on a large plate.

Place broccoli “trees” standing up in the rice to form a “forest” in the rice.

Sprinkle shredded carrot on the edges of the plate.
