Ingredients

Adjust Servings:
1 tablespoon Ghee
1 Onion , chopped
2 Garlic cloves, crushed
2 teaspoons smoked Paprika
¾ teaspoon Salt
4 Tomatoes , quartered
2 Chicken breasts, sliced
approx. 20 French/ Green Beans , topped, tailed and chopped into 1-cm/½-in. lengths
1½ cups (250 g) Basmati Rice , rinsed
1 Chicken broth cube or 1 tablespoon vegetable stock paste
24 pitted/stoned Black Olives
1 pot of marinated Artichokes
4 slices of Parma Ham or prosciutto, torn roughly

This is a very simple chicken and rice dish. It’s a great meal to put together if you have unexpected guests for dinner.

Press the Sauté button on the multi-cooker and add the ghee. When melted, add the onion and garlic and stir constantly for about 4 minutes. Then add the paprika, salt, tomatoes, chicken and French/green beans and stir. Stir in the rice, then add 320 ml/11 fl. oz. water and the stock cube or paste.

Secure the lid in place and set to Rice for 12 minutes. At the end of cooking, use the QPR method. Stir in the olives, artichokes and torn Parma ham or prosciutto. Serve immediately.
