Ingredients

Adjust Servings:
1 cup (245 g) unsweetened Applesauce
½ cup (120 ml) pure Maple Syrup
2 cups (250 g) Bob’s Red Mill white Rice Flour or brown rice flour
½ cup (56 g) Flax Meal
1 teaspoon (6 g) Salt
1 teaspoon (4.6 g) Baking Soda
1 teaspoon (4.6 g) Baking Powder
1½ cups (245 g) packed sulfitefree Raisins , dates, or other dried fruit pieces
2 teaspoons (5 g) Flax Seeds

These are surprisingly good little biscuit cookies. You may add a teaspoon of ground cinnamon or orange zest, if desired.

Preheat oven to 350°F (180°C, or gas mark 4).

With a mixer, stir together the applesauce and syrup. Add the flour and the next 4 ingredients (through baking powder) and blend well. Stir in the dried fruit and flaxseeds.

Drop by 2-inch (5-cm) mounds onto a greased cookie sheet.

Bake for about 15 minutes or until firm. Cool completely on the baking sheet.
