Ingredients

Adjust Servings:
½ cup (50 g) Macadamia Nuts
2 tablespoons (20 g) ground Flax Seeds or linseeds
1¾ tablespoons (15 g) Coconut Flour
½ teaspoon Baking Soda
¼ teaspoon Salt
4 teaspoons (20 g) Ghee , coconut oil or butter
1½ teaspoons Honey or maple syrup
½ teaspoon Apple Cider Vinegar
3 Egg

This is a delicious and nutritious fibre-rich loaf made without grains. As well as being a great breakfast bread, it is delicious served with the chicken liver pâté.

In a food processor, grind the nuts, flaxseeds/linseeds, coconut flour, bicarbonate of/baking soda and salt. Add the ghee, oil or butter, the honey or syrup, vinegar and eggs. Process again to a batter. Pour the mixture into a mini loaf pan.

Place the loaf pan on the trivet. Add 450 ml/scant 2 cups water to the multi-cooker, then lower the trivet and loaf pan into the inner pot.

Secure the lid in place and set to Manual or High Pressure for 30 minutes.

Allow the loaf to cool a little, then remove from the loaf pan and leave on a wire rack to cool completely.
