Ingredients

6 Egg
1 cup of whole Milk
½ cup of heavy Whipping Cream
½ teaspoons of pure Vanilla
1 cup of all-purpose Flour
1/8 teaspoons of Salt
¼ cup of Powdered Sugar
For the Filling
1 1/3 cups of heavy Whipping Cream
3 Tablespoons of unsweetened Cocoa Powder
3 Tablespoons of white Sugar
1 teaspoon of Almond Extract
2 Tablespoons of Amaretto Liqueur
For the Ganache
9 ounces of Semisweet Chocolate
1 cup of heavy Whipping Cream
2 Tablespoons of Amaretto

Prepare the crepes. In a blender, add in all of the ingredients for the crepes. Blend on the highest setting until creamy in consistency.

In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat and set the crepes aside.

Prepare the filling. In a bowl, add in the heavy whipping cream and white sugar. Beat with an electric mixer until thick in consistency. Add in the powdered unsweetened cocoa, amaretto and almond extract. Continue to beat until peaks form on the surface. Set aside.

Prepare the ganache. In a bowl, add in the chocolate. In a saucepan set over low heat, add in the heavy whipping cream. Allow to come to a simmer. Pour over the chocolate and set aside to rest for 3 minutes or until the chocolate melts. Whisk to mix. Add in the amaretto and whisk well to incorporate.

Place a crepe onto a serving plate. Coat the crepe with the ganache. Spread a tiny bit of the filling over the ganache. Repeat the layers until all ingredients have been used. Serve immediately.
