2 ounces (60 ml) White Rum
2 ounces (60 ml) Lime -Chile Pickled Pineapple brine, plus wedges for garnish
¼ ounce (7 ml) Aperol
2 ounces (60 ml) prosecco Club Soda

When you’ve eaten all of the juicy, yummy pineapple pickles, use the brine to make this refreshing, fizzy cocktail.

In an ice-filled cocktail shaker, combine the rum, pickle brine, and Aperol. Shake vigorously.

Strain into an ice-filled Collins glass, and add the prosecco and a splash of soda. Garnish with pineapple and serve.
