Spinach, ricotta and bacon crepes recipe

Ingredients

Adjust Servings:
For the Crepes
1 cup of all-purpose Flour
½ teaspoons of Salt
Dash of Cayenne Pepper
4 Egg , beaten
2 cups of whole Milk
3 Tablespoons of Butter , melted
For the Filling
6 slices of Bacon
1 Vidalia Onion , cut into quarters
4 cloves of Garlic , minced
1 teaspoon of dried Oregano
½ cup of sundried Tomatoes , chopped
6 cups of baby Spinach
1, 15 ounce container of Ricotta Cheese
1 cup of Mozzarella Cheese , shredded
1 cup of grated Parmesan Cheese
¼ teaspoons of Salt
¼ teaspoons of Black Pepper

These crepes are made with a touch of heat to a dish you would have never thought would require some spice. It makes for a satisfying brunch, lunch or dinner.

Steps

Prepare the crepes. In a bowl, add in the all-purpose flour, dash of salt and dash of cayenne pepper. Stir well to mix. Add in the beaten eggs, whole milk and melted butter. Stir well until just mixed. Cover and set aside to rest for 30 minutes.

In a skillet set over medium to high heat, grease with the cooking spray. Add ¼ cup of the crepe batter. Swirl the skillet around to coat the bottom with the batter. Cook for 1 to 2 minutes. Flip. Continue to cook for 1 minute or until gold. Remove and transfer onto a plate. Repeat and set the crepes aside.

Prepare the filling. In a separate skillet set over medium heat, add in the bacon slices. Cook for 6 to 8 minutes or until crispy. Transfer onto a plate lined with paper towels to drain. Once cooled, crumble the bacon.

In the same skillet, add in the onion quarters, minced garlic and dried oregano. Cook for 6 to 8 minutes or until soft. Add in the tomatoes and continue to cook for 1 minute.

Add in the baby spinach. Cook for 2 minutes or until wilted. Add in the ricotta cheese, shredded mozzarella cheese and grated Parmesan cheese. Cook for 2 minutes or until the cheese is melted. Remove from heat. Add in the crumbled bacon. Season with a dash of salt and black pepper. Stir gently to incorporate.

Spoon ¼ of the spinach mix into the center of each crepe. Roll tightly and place with the seam side facing down. Repeat. Serve immediately.
