Ingredients

Adjust Servings:
½ cup (45 g) Oat Flour (oats blended to a fine powder)
⅓ cup (60 g) plain Flour
⅓ cup (80 g) Sugar
½ tsp ground Cinnamon
½ tsp Baking Powder
1½ cups (370 ml) Almond Milk
1 tbsp Vanilla Extract
¾ cup (200 g) Almond Butter (or use peanut butter)
150 g vegan White Chocolate (or any vegan chocolate works), roughly chopped
100 g Macadamia Nuts , roughly chopped
Pinch of Salt

White chocolate chip macadamia nut blondies are a sweet treat, especially when they are still warm and just out of the oven.

Steps

Preheat the oven to 180°C/160°C Fan/350°F/gas 4. Line a 25 cm (10 in) square baking tin with baking parchment.

Combine the flours, sugar, cinnamon and baking powder in a mixing bowl. Mix the milk, vanilla and nut butter together in a measuring jug until you have a smooth liquid consistency. Pour the liquid into the dry mix and stir until everything is well combined.

Stir the chocolate and macadamia nuts into the batter, then pour everything into the tin, smoothing the top of the batter. Bake in the oven for 25 minutes.

Remove the blondies from the oven and allow to cool for 30 minutes before cutting into 12 equal pieces. Enjoy!
