2¼ cups all-purpose Flour
2¼ teaspoons Baking Powder
¾ teaspoon Kosher Salt
¾ cup (1½ sticks) Unsalted Butter , room temperature
1½ cups Granulated Sugar
3 large Egg , room temperature
1½ teaspoons Vanilla Extract
1 cup Buttermilk , room temperature
For the Whipped Cream
1 cup heavy Whipping Cream
1 tablespoon Granulated Sugar
1 teaspoon Vanilla Extract
For the Topping
1 package (16-ounces) fresh Strawberries , sliced

Here’s a simple vanilla cake with whipped cream and fresh strawberries. Perfect for a birthday or really any occasion. Even introducing your dad to your new man-friend. Not awkward at all.

To make the Cake

Preheat the oven to 350°F.

Grease two 8-inch round cake pans with cooking spray, and line the bottom of each with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In the bowl of a stand mixer set to medium speed or using a hand mixer, cream together the butter and sugar until very fluffy, about 3 minutes.

Crack in the eggs, one at a time and mix thoroughly after each addition. Add the vanilla and mix it in.

With the mixer set to low speed, add the flour mixture and the buttermilk in alternating batches. Make sure to begin and end with the flour mixture, and be mindful not to overmix the batter. Mix just until all ingredients are incorporated.

Divide the cake batter between the prepared pans and bake for 25 to 27 minutes, or until a toothpick inserted into the center comes out free of crumbs.

Let cool completely before making the whipped cream and decorating the cake.

To make the Whipped Cream

Pour the heavy whipping cream into the bowl of a stand mixer or if using a hand mixer, in a medium mixing bowl. Add the sugar, and turn the mixer on high speed. Whip the cream until peaks form. If you prefer soft peaks, whip for about 5 minutes. For stiff peaks, whip for 7 to 8 minutes.

Once the cream is the consistency you prefer, drizzle in the vanilla extract and stir gently just to combine.

To Decorate the Cake

Set one layer of the cake on a cake turntable and carefully slice off the dome or top of the cake. Spread half of the whipped cream on top of the cake, then arrange the strawberry slices on top of the whipped cream. If you don’t have a cake turntable, simply set the first cake layer on a large cutting board and rotate cutting board as you frost.

Place the second layer of cake on top of the first, and repeat step 1. Serve immediately.
