Tomatoes with mayonnaise sauce recipe

Ingredients

5-6 medium roman type Tomatoes
½ cup diced mixed vegetables ( White Onions , fresh dill, avocado, capsicum, greens)
For Caper Filling
1/3 cup fresh Coconut flesh
flesh Almond Butter
3 tbsp finely chopped Celery
1 tbsp finely chopped fresh Onion
1 tbsp finely chopped Shallot
Pinch of Oregano
Pinch of white ground Black Pepper
1 tbsp Coconut Oil
1½ tbsp Olive Oil
1 tbsp Lemon Juice
1 tsp Vinegar
½ tsp Agave Nectar
1/3 cup finely diced Cucumber
2 tbsp finely chopped Cilantro
2 tsp Capers Seeds
1 medium minced Garlic clove
Water if needed
Mayonnaise Sauce
2 young Coconut flesh
Pinch of Salt
2 tbsp Olive Oil
1 tbsp Vinegar
1 tsp Mustard Powder
Pinch of white ground Black Pepper
1 tsp Agave Nectar
1 tsp diced White Onions

Cut and empty the tomatoes. Mix the vegetables.
