4 oz pepper Monterey Jack Cheese
4 oz Cheddar Cheese
4 oz Swiss Cheese
4 oz Havarti Cheese
¼ cup pickled Jalapeno Pepper juice
¼ cup Mayonnaise
2 (8-oz) packages Cream Cheese , softened
2 (4-oz) jars diced Pimiento , drained
16 sourdough Bread slices, toasted
½ cup tightly packed baby Spinach leaves
1½ cups thin Cucumber slices
1 cup thin Onion slices
½ cup Alfalfa sprouts
8 cooked Bacon slices

A splash of jalapeño pepper juice adds a zesty punch to pimiento cheese.

Position shredding disk in food processor bowl; shred first 4 ingredients, and place in a large bowl. Add pepper juice and next 3 ingredients; stir well.

Spread ½ cup pimiento cheese filling on each of 8 toast slices. Top pimiento cheese evenly with spinach leaves, cucumber slices, onion slices, alfalfa sprouts, bacon slices, and remaining toast slices.
