Ingredients

Adjust Servings:
1 tablespoon Olive Oil
1 Yellow Onion , diced
1 Scallion , chopped
2 cloves Garlic , minced
1 tablespoon green Bell Peppers , minced
2 cups Water
1 Tomato , diced
1 pound Tempeh cut into 1-inch cubes
1 teaspoon ground Cumin
½ teaspoon Curry Powder
¼ teaspoon hot red Chili Powder
½ teaspoon Turmeric
3 tablespoons Parsley , chopped
Sea Salt to taste
½ teaspoon freshly ground Black Pepper
2 cups fresh Green Beans cut into 2-inch pieces

Heat the oil in a large saucepan over medium heat and sauté onion, scallion, garlic, and green pepper until the onion is translucent.

Add water, tomato, tempeh, cumin, curry powder, chili powder, turmeric, parsley, salt, and pepper and simmer for 20 minutes.

Add the green beans and cook for 10 minutes.
