Ingredients

Adjust Servings:
4 ounces Coconut Flour
8 ounces Split Peas , cooked
3 tablespoons Coconut Oil
2 teaspoons Curry Leaves
1 teaspoon minced Garlic
¾ teaspoon Salt
¼ teaspoon Thyme
¼ cup Water
3 ounces Spinach , coarsely chopped
3 ounces Cauliflower , cut into bite-size pieces
6 ounces Brown Rice , cooked
3 ounces Avocado , sliced

Preheat oven to 375 degrees. Lightly grease 4 x 8 baking pan with coconut oil.

In a blender, combine coconut flour, split peas, oil, curry, garlic, salt, thyme & ¼ cup water.

Separately, combine spinach, cauliflower, & brown rice.

Transfer to covered baking pan, add the flour & the beans; bake for 15 minutes.
Place avocado slices on top for garnish.
