On the sweet tea spectrum, this version sits far to the not-as-sweet side. Feel free to add more honey and adjust it to your liking. A touch of baking soda added to tea helps counteract the tea’s natural tannins, making for a smoother taste.

In a medium saucepan, bring 3 cups (720 ml) water to a boil. Remove the pan from the heat and add the baking soda. Add the tea bags and allow them to steep for 5 minutes.

Remove the tea bags, stir in the honey, and allow the tea to cool enough to pour into a serving pitcher. Stir in 7 cups (1.7 L) cold water. Taste and adjust the honey if you’d like the tea to be sweeter. Add the mint, if desired.

Serve the tea over ice with lemon wedges as garnish.
