1 cup purple Onion (chopped)
2 tbsp Olive Oil
2 tbsp Lime Juice
1 tbsp minced Garlic
½ tbsp Chili Powder
¼ tsp Cayenne Pepper
¼ cup Parsley
Salt
Black Pepper , to taste

Prepare the black beans. Preheat the oven to 400°F / 200°C.

Cut the sweet potato into ¼-inch cubes and put these in a medium-sized bowl. Add the onions, 1 tablespoon of olive oil, and salt to taste.

Toss the ingredients until the sweet potatoes and onions are completely coated.

Transfer the ingredients to a baking sheet lined with parchment paper and spread them out in a single layer.

Put the baking sheet in the oven and roast until the sweet potatoes are starting to turn brown and crispy, around 40 minutes.

Meanwhile, combine the remaining olive oil, lime juice, garlic, chili powder, and cayenne thoroughly in a large bowl, until no lumps remain.

Remove the sweet potatoes and onions from the oven and transfer them to the large bowl.
