1 medium Onion , chopped (1½ cups)
1 Carrots , chopped (⅓ cup)
1 stalk Celery , chopped (⅓ cup)
2 tablespoons Olive Oil
6 cups low-sodium Chicken broth
½ pound baked or deli Ham , chopped (2 cups)
½ pound dried Split Peas (1 cup)
1 tablespoon fresh Thyme , chopped
Kosher Salt
Black Pepper
Croutons , for serving

Cook the onion, carrot, and celery in the oil in a large saucepan over medium-high heat until tender.

Add the broth, ham, split peas, and thyme; season with ¾ teaspoon salt and ¼ teaspoon pepper. Simmer until the peas are tender, 55 to 65 minutes. Top with croutons.
