Adjust Servings:
4 cups string Beans , strings removed
1½ cups chopped or sliced Onion
6 cloves Garlic , sliced
5 cups sliced Mushrooms
1 cup chopped fresh Basil
3 tablespoons chopped fresh Parsley
1 teaspoon chopped fresh Oregano
2 tablespoons Peppercorns
½ teaspoon Red Pepper
4 tablespoons Maple Syrup
1 teaspoon Dill
Dash Cayenne Pepper
¼ cup extra virgin Olive Oil
3 cups chopped fresh Tomatoes
1 cup grated soy Parmesan Cheese

In a large saucepan, sauté string beans, onions, garlic, mushrooms, basil, parsley, oregano, peppercorns, red pepper, maple syrup, dill and cayenne pepper in the oil over medium-high heat for 5-7 minutes.

Add the tomatoes and cook another 15 to 20 minutes.

Garnish with the vegan cheese and serve with brown rice.
