1 Tablespoon The Fresh 20 Mixed Spice Blend
¾ teaspoon Kosher Salt
1½ pounds skirt Steak
2 Tablespoons Olive Oil
For the Goat Cheese and Couscous Kale Salad
2 cups leftover Couscous
2 bunches Kale , stems removed and chopped into small bite-sized pieces
2 ounces Goat Cheese , crumbled
1 grated Lemon Juice and zest
1 Tablespoon Olive Oil
Kosher Salt
Black Pepper

For the Skirt Steak

Combine the spice blend with salt. Season both sides of the skirt steak with the seasoning.

Heat a large nonstick sauté pan or grill pan over medium-high heat. Add the oil, and once it is hot, add the meat and cook for 2 to 3 minutes per side for rare, or to the desired doneness. Let the meat rest before slicing it against the grain.

For the Goat Cheese and Couscous Kale Salad

In a medium bowl, fluff the couscous with a fork.

Toss in the chopped kale, goat cheese, lemon zest and juice, olive oil, and salt and pepper to taste and mix well.
