900 g Lamb mince
2 tablespoons finely chopped fresh Mint
1 tablespoon finely chopped fresh Rosemary
1 teaspoon Sea Salt
½ teaspoon Lemon Zest
1 tablespoon cooking Solid Fat

In a large bowl, combine the lamb, mint, rosemary, salt and lemon zest.

Using your hands, form into 12 patties.

Heat some of the cooking fat in a cast-iron frying pan on medium heat. Cook the patties for 5 to 8 minutes per side, until nicely browned on the outside and cooked throughout. Alternatively, bake the patties in the oven for about 20 minutes at 200°C.
