Make sure you have some vanilla ice cream on hand to serve alongside this warm Southern dessert. The bourbon makes this recipe ideal for a ladies’ night in, filled with cocktails, card games, and good conversation.

Steps

1
Done

For the Peach Filling

Spray the insert of a 6-quart slow cooker with cooking spray.

2
Done

Place the peaches, apple butter, bourbon, sugar, and salt in the slow cooker. Stir to coat the peaches fully, then spread them out evenly.

3
Done

For the Cobbler

In a large bowl, mix the flour, yellow cornmeal, sugar, baking powder, and salt. Whisk in the milk. Whisk in the melted butter until smooth. Pour the batter over the peaches, making sure it coats the entire surface.

4
Done

Place a long piece of paper towel over the slow cooker and cover with the lid. Pull the paper towel tight so it doesn’t sag. Cook on Low for 7 to 9 hours or on High for 4 to 6 hours, until a toothpick inserted into the center comes out clean. Once the middle of the top has puffed up and is golden around the edges, the peach cobbler is ready to serve.

5
Done

Serve warm, garnished with extra peach slices.
