17 fl oz (500 ml) White Wine
¼ cup Sugar
1 Star Anise
1 Cinnamon stick
6 sheets frozen Puff Pastry (7in x 5½in (18 x 14 cm))
2 tablespoons Butter
Flour for rolling
¼ cup Sour Cream
3–4 tablespoons ground Almonds
4 tablespoons Raisins
1 tablespoon Cinnamon sugar
confectioners’ Sugar for dusting
For the Pear Cream
¾ cup heavy Cream
1–2 tablespoons Pear liquor
