These frozen treats are almost as easy to make as ice cubes. This recipe combines the flavors of strawberry and lemon to cool you off on a hot summer day, but feel free to switch up the fruit and juice. If you have leftover juice after filling the ice pop molds, freeze it in ice cube trays; the resulting strawberry lemonade ice cubes turn iced tea or seltzer into a refreshing summer drink. Vary the fruit and the juice to create new flavors and avoid your food allergens; pair different berries or pureed fruits with any juice. Adjust the sugar to your taste and the tartness of the ingredients you choose.

Combine the sugar and ½ cup (120 ml) of water in a small saucepan and bring to a boil over medium-high heat. Remove the pan from the heat, stir in the remaining water, and refrigerate for 15 minutes.

Puree the strawberries and lemon juice together in a food processor or blender. Add the chilled sugar water and blend for 30 seconds.

Pour the mixture into ice pop molds. Place the sticks into the molds and freeze for approximately 6 to 8 hours, following the directions for your ice pop molds. These will keep in the freezer for up to 3 months.
