Ingredients

1½ pounds chicken or Italian turkey Sausages
2 pints grape or cherry Tomatoes
1 medium Onion , thinly sliced
2 Garlic cloves, minced or pressed
2 Tablespoons Olive Oil
1 Tablespoon Balsamic vinegar
1 teaspoon dried Oregano
½ teaspoon Kosher Salt
½ teaspoon Black Pepper
1 pound baby Bok Choy , roughly chopped
Two 14-ounce cans Cannellini Beans (or great northern white beans), drained and rinsed

Preheat the oven to 375°F. Arrange the sausage in a 9-x-13-inch baking dish.

In a large bowl, toss together the tomatoes, onion, garlic, olive oil, vinegar, oregano, salt, and pepper. Pour the mixture over the sausages.

Bake for 30 minutes. Add the bok choy and beans to the casserole and stir to mix. Bake for 20 minutes, or until the casserole is slightly browned on top. Remove from the oven and let rest for 5 minutes before serving.
