Ingredients

Adjust Servings:
1 cup peeled Egusi (melon) seeds (washed)
1 cup tinned plum Tomatoes
½ cup chopped Spinach
1 medium Onion chopped
1 small Scotch Bonnet
2 teaspoons Seasoning powder (of choice) or equivalent.
¼ cup Vegetable Oil
½ teaspoon Curry Powder

Egusi seeds (name may vary) are popularly found in melons grown in many parts of Africa such as in Mali, Ghana, Togo and Nigeria. Egusi is a protein and fat rich seed derived from melons, it is then dried and ground to make a soup.

Steps

Add Egusi (melon) seeds, plum tomatoes, scotch bonnet and ½ cup of water to a blender, and blend until smooth then place aside.

Place a pot on medium heat and add vegetable oil

Add chopped onions and curry powder and fry for 3 minutes.

Add blended Egusi mixture to a pot and simmer for 5 minutes.

Add seasoning and ⅓ cup of water and leave to simmer for 5 more minutes.

Add chopped spinach and allow to cook for a further 7 minutes before turning heat off.

Serve with a swallow, e.g. Fufu or Eba.
