¼ cup Vegetable Oil
1 teaspoon Chili Powder
1 tablespoon Tomato Paste
2 teaspoons Seasoning powder of choice or equivalent

This carrot stew recipe is an adaptation of the ever-popular red tomato stew which many African countries love. This recipe replaces the tomatoes with carrots is packed full of vitamins A and C.

Steps

Peel and rinse carrots then cut into smaller pieces.

Transfer pieces of carrots into a blender, add ½ cup of water and blend until smooth.

Place a pot on medium heat and add oil.

When the oil has heated up, add onions and fry for 2 minutes.

Add tomato paste and dried mixed herbs and fry for 3 minutes.

Add blended carrot and mix with tomato paste and onions.

Add seasoning powder to desired taste and mix together.

Allow to cook for 10 - 15 minutes approx. before turning off the heat. Serve with rice.
