Ingredients

Adjust Servings:
3 tablespoons Agar Agar (dissolved in ½ cup apple juice)
2 cups extra firm silken Tofu
1½ cups Amazake
¼ cup pure Maple Syrup
1½ teaspoons pure Almond Extract
1 tablespoon Kudzu (dissolved in ¼ cup boiling water)
¼ cup unsweetened flaked Coconut
1 pre-baked Piecrust

In a small saucepan bring the agar-agar & apple juice to a boil, reduce the heat; simmer for 10 minutes.

In a blender or food processor combine tofu, amazake, maple syrup, almond extract, kudzu & coconut; process for 2 minutes or until smooth.

Pour this mixture into the prebaked pie crust; refrigerate for 1 hour. Serve chilled with fresh fruit.
