1 Ham hock
1 cup sliced Chorizo Sausage
6 cups of Chicken broth
1 cup Black Beans (soaked overnight in water)
1 diced Onion
1 tsp smoked Paprika
1 Saffron tread
Salt
Black Pepper to taste
1 chopped red Bell Peppers

This is a rich and filling stew from the Basque region.

Place the chorizo and ham hock in a pot of water and simmer for 10 minutes. Drain the water.

Add the meats back into the pot, with the broth and remaining ingredients.

Cover the pot and let simmer for 1 hour. Remove the ham hock.
