Ingredients

Adjust Servings:
450 grams white Mushrooms , washed and halved
4 large, yellow Potatoes , washed and cut crosswise in ½ thick slices
4 medium Onion , quartered
1 head of Broccoli , core discarded (keep florets)
6 Garlic cloves, crushed
3 tablespoons extra-virgin Olive Oil
1 teaspoon coarse Sea Salt

Preheat oven to 425 degrees F.

Brush the bottom of a large roasting pan with one tablespoon of olive oil.

Add mushrooms, potatoes, onions, broccoli, garlic, and salt. Add remaining oil and toss.

Roast, uncovered, for 30 minutes or until vegetables are just tender. Turn once halfway through cooking.

Remove from oven, plate and serve.
