Ingredients

Adjust Servings:
For the Strawberries and Cream
2 cups of Strawberries , evenly divided
2 Tablespoons of Sweetener
1 to 2 Tablespoons of Cointreau
1 ½ cups of Greek Yogurt
2 Tablespoons of white Sugar
1 teaspoon of pure Vanilla
For the Crepes
3 Egg
2 Tablespoons of Vegetable Oil
1 teaspoon of pure Vanilla
2 Tablespoons of white Sugar
1¼ cup of low-fat Milk
1 cup of all-purpose Flour

Prepare the strawberries. Slice the strawberries into quarters. Add half of the strawberries into a bowl. Add in the sweetener and Cointreau. Toss well to mix. Set aside to rest for 15 minutes.

Prepare the crepes. In a blender, add in the eggs, vegetable oil, pure vanilla, white sugar, low-fat milk and all-purpose flour. Blend on the highest setting until smooth in consistency.

In a skillet set over medium to high heat, grease with cooking spray. Add ¼ cup of the crepe batter into the skillet. Swirl around to coat the bottom. Cook for 1 to 2 minutes. Flip and continue to cook for another minute until golden. Remove and repeat with the remaining crepe batter.

In a bowl, add in the Greek yogurt, white sugar and pure vanilla. Stir well until smooth in consistency. Add in the strawberry mix and stir well to mix.

Spread the strawberry cream mix onto each crepe. Roll tightly and place onto a plate. Repeat.

Top off with the remaining chopped strawberries. Serve immediately.
