2 cloves Garlic , minced
3-lb Beef Eye Fillet of round roast, trimmed of fat
3 Tbsp Balsamic vinegar
¼ cup gluten-free reduced-sodium Soy Sauce or Bragg’s liquid aminos
2 Tbsp gluten-free Worcestershire Sauce
2 tsp dry Mustard

Rub cracked pepper and garlic onto roast. Put roast in the slow cooker.

Make several shallow slits in top of meat.

In a small bowl, combine remaining ingredients. Spoon over meat.

Cover and cook on Low for 6–8 hours, or on High for 3–4 hours, just until meat is tender, but not dry.
