Recapture memories of a fireside treat of youth that wonderful cold-comfort combination of Graham crackers, toasted marshmallow, and chocolate. This warm, cozy drink has all the elements of traditional S’mores, but in a drinkable, home-kitchen version. Reward the kids with an after-school hot cocoa with brûléed marshmallows, a drizzle of chocolate syrup, and bits of Graham cracker with every sip. Not only for the kids, but for everyone’s “inner kid.”

Steps

1
Done

Preheat oven to broil. Moisten the rim of 2 serving cups; dip each in Graham cracker crumbs to coat. Combine cocoa, sugar, and salt in a saucepan.

2
Done

In a separate saucepan, heat milk over medium heat until it becomes hot, not quite to a boil. Add just a few tablespoons of the hot milk into the cocoa mix, and stir into a smooth paste with a wooden spoon.

3
Done

Gradually add the remainder of the milk and continue stirring until fully incorporated. Simmer over low heat for 5 minutes, then froth with an immersion blender until creamy and foamy.

4
Done

Divide between the 2 prepared cups and top each with ¼ cup of marshmallows. Set mugs on a baking sheet in the oven and broil until marshmallows are golden brown.

5
Done

Carefully remove from the oven with a towel. Top each with extra Graham cracker crumbs and a drizzle of chocolate syrup before serving.
