1 cup long grain Rice , uncooked
¼ cup of Butter
1 small Red Onion , finely chopped
1 Carrots , finely chopped
1 Celery , finely chopped
1 Bell Peppers , finely chopped
150 grams white Mushrooms , halved
3 Garlic cloves, minced
2 tablespoons extra-virgin Olive Oil
Salt
Black Pepper to taste

Rice with vegetables is one of those side dishes that goes deliciously well with grilled meat and chicken. Simple to prepare and enjoyed by all!

Cook the rice as per package directions.

Meanwhile, in a medium saucepan, heat the oil and butter together on medium-high heat. Add the onions, carrots, celery, bell pepper, mushrooms, garlic, salt and pepper to taste. Saute for 4 minutes.

Reduce heat to medium-low and continue to cook, covered until vegetables are tender, about 10 minutes.

Add the cooked rice to the vegetables and stir together. Remove from heat, cover and let stand for 5 minutes.
