400 g Penne Pasta
125 g grated Parmesan Cheese
125 g grated Raclette Cheese (or add more Parmesan)
125-200 g grated Pecorino Chees (or cream cheese)
200 g Milk
200 g fat Cream
250 g Broccoli
8-10 g spice Shichimi
Salt
Black Pepper to taste

This paste could be called “three cheese” the use of different cheeses gives it a taste of polyphony. It is important to put this trio on the score: one cheese should be salted, the second – with smoked or spicy taste and the third – a gentle, creamy, for balance. A specific label is not so important.

Boil a large pot of water and add salt, preferably sea.

To do this, mix equal parts milk and cream, add all the cheese (solid pre-grate). Simmer, stirring, until the cheese is melted and blended. For uniformity of grind the sauce in a blender and strain through a sieve. Broccoli divide into florets and blanch 2 minutes in boiling water.

The pasta is ready drain in a colander and place in the sauce along with the broccoli. Bring the sauce to a boil and gently boil down. Put the pasta in the dish, season shichimi, salt and pepper to taste.
