Ingredients

12 fresh medium Shrimp (10 oz/ 300 g), peeled and deveined
1 teaspoon Sugar
½ teaspoon Salt
½ teaspoon ground White Pepper
½ cup (80 g) ground Chicken
½ teaspoon Cornstarch
2 tablespoons Oil
8 fresh or canned Sugar Cane sticks (each 4 in/10 cm in length)
Sweet Sauce and Sour Sauce

This is a very important Vietnamese dish, from the imperial capital of Hue. Fresh sticks of sugar cane are used as skewers. The heated cane releases a burst of sweet cane juice when bitten into.

Grind the shrimp, sugar, salt and pepper to a paste in a food processor, then combine with the ground chicken and corn-starch in a bowl, and mix until well blended.

Lightly grease your hands with a little oil, spoon 1 tablespoon of the shrimp mixture into one hand and wrap it tightly around the middle of a sugar cane stick. Repeat with the remaining shrimp mixture and sugar cane sticks.

Grill on a pan grill or under a preheated broiler for 5 to 10 minutes, turning frequently until crispy and slightly browned on all sides. Serve hot with a bowl of Sweet and Sour Sauce on the side.
