5 g dried Yeast
1 tbsp Maple Syrup
170 g wholemeal Spelt Flour
¼ tsp Salt
1½ tsp blue Fenugreek Seeds
3 tbsp Yeast flakes

Stir the yeast and maple syrup into 120 ml warm water and set aside until the yeast has dissolved.

Mix the dry ingredients together and add the yeast and maple syrup mixture. Stir with a wooden spoon until the flour and liquid combine to form a dough. Knead the dough by hand for 10 minutes over a floured work surface. Put the dough into a bowl, cover and leave in a warm place for 1 hour until it has doubled in size.

Divide the dough into four uniform pieces. Roll each piece into a long sausage and wind it around a wooden stick or bamboo skewer.

Bake the twists over indirect heat for 15 minutes, turning them over from time to time.
