½ cup (60 g) cup dried Apricots
2 tablespoons shelled Hemp Seeds
1½ tablespoons Coconut Oil

These light bites packed full of energy-boosting ingredients are the perfect fuel for physical activites where you need a small, compact source of energy that you can easily stop to eat at regular intervals, for instance they world be particularly good to bring on a hike The natural fruit sugars provide energy and the almonds provide protein, coconut oil and hemp seeds bring the healthy fats, and the coconut oil helps regulate metabolism. Put the almonds in a food processor and pulse until crumbly. Add the apricots and process until well incorporated and the mixture starts to come together into a paste. Add the hemp seeds and coconut oil, plus vanilla extract to taste.

Divide the mixture into 8 and roll each portion into a ball between the palms of your hands.

Freeze the sports bites for at least 15 minutes. Store in the fridge in an airtight container for up to 3 weeks.
