Ingredients

Adjust Servings:
2 tsp extra-virgin Olive Oil
4 bone-in Pork chops 25-30mm (1” to 1½) thick
1 tsp Salt divided
½ tsp Black Pepper divided
14.5 oz (1 x 350 g) can chopped Tomatoes with juice
6 oz (150 g) of Tomato Paste
1 small green Bell Peppers seeded and chopped
(Optional) ½ small Onion chopped (½ - ¾ cup)
1 x 25 mm (1”) clump of fresh Ginger finely grated
1 tbsp dried Oregano
¼ tsp Red Pepper Flakes (optional)
Cooked Spaghetti or fettuccine noodles, grated
Parmesan Cheese , chopped fresh parsley

This mouth-wateringly tasty traditional lightly seasoned slow cooked pork chop meal is cooked in a rich, thick tomato sauce for a delicious dinner any time of the year.  Great to impress friends and family!

Steps

Heat olive oil in a large frying pan sauté and over medium-high heat.

Season pork chops with ½ tsp salt and ¼ tsp black pepper. Sear the pork chops in shallow frying pan for 3 minutes each side, to form a light crust. Now put the pork chops into a casserole dish.  Pre-heat the oven at 140C (275F).

Add the remaining ingredients to the casserole dish, stir gently to combine.

Cover and cook on low for 2 – 2½ hours, until pork chops are tender and cooked through.

Serve over spaghetti or fettuccine noodles with sauce spooned on top, sprinkled with Parmesan cheese and garnish with fresh parsley.
