Ingredients

¾ cup Carob Chips
¼ cup Walnut Oil
¾ cup Maple Syrup , grade B, or agave
1 teaspoon Vanilla Extract
1 teaspoon Almond Extract
2 cups whole Wheat Pastry Flour
½ cup Flax Seeds meal
1 tablespoon Baking Powder
1 teaspoon ground Cinnamon
½ cup Almond Milk

Preheat oven to 375°.

Place the carob chips, walnut oil, maple syrup, vanilla extract, and almond extract in the top of a double boiler and heat until the carob chips are melted, stirring frequently.

Combine flour, flaxseed meal, baking powder, and cinnamon in a large bowl and make a well in the center.

Pour the almond milk in the center of the well and mix until coarsely blended. Add melted carob mixture and beat with an electric mixer until smooth.

Pour batter into a greased 9-inch cake pan and bake for 25 minutes, or until a toothpick placed into the center comes out clean.
