1.5 lb Summer Squash , cut into 1-inch chunks
1 cup grated Manchego Cheese (sheep cheese)
1 tablespoon extra virgin Olive Oil
1 Yellow Onion , diced
1½ teaspoons Hot Pimento
1 teaspoon Salt

This side dish uses traditional Spain Ingredients:like the Manchego and pimiento and fits perfectly with meat based dishes.

Toss the squash with salt in a colander.Place aside for 30 minutes.

After 30 minutes, transfer the squash to a large microwave safe plate so that it all lays flat in one layer.Add the onion, pimento, and olive oil.

Cook in the microwave on high for 4–6 minutes.

Flip and roast for 2-4 minutes more.

Serve after, sprinkled with Manchego.
